Many times I’ve seen ants eating dead insects like cockroach, fly, garbage sometimes dead animals like birds, chickens dog etc.
we know that cockroach and flies are dirty, how much more the dead animals. I was just wondering why the ants don’t get sick eating this rotten foods. do they have anti microbes in there bodies?

Yes, I think that ants have antibacterial glands and such that prevents them from getting sick from rotten food. But it is still not uncommon for ants to catch diseases from flies and other protein sources.
